Our Favorite Meal Ideas using Smokey Mo’s Meats

Brisket is often considered a lunch or dinner food, but not anymore. Don’t limit your love of brisket to a time of day. Start your morning with a delicious, protein-filled breakfast!

Breakfast Brisket Hash
  • Ingredients: Brisket, Vegetable Oil, Onions, Bell Peppers, Garlic, Salt, & Pepper

Directions: Pre-heat your cast iron skillet. When hot enough, add oil, onions, and bell peppers to the skillet and cook until they are translucent. Add garlic and cook 3 more minutes. Throw in your brisket, cooked hash brown potatoes, and top it off with 2-3 eggs. Cook for about 10 minutes or until brisket is heated through. Top it off with some salt and pepper and enjoy! BBQ Chicken Quesadilla
  • Ingredients: Chicken, Julienned Red Onions, BBQ Sauce, Tortilla, Monterey Jack Cheese, Cheddar Cheese

Directions: In a large pan sauté julienned red onions. While onions are cooking, shred your chicken and add it to the skillet once the onions are cooked. Add BBQ sauce, stir to mix, and remove from the pan. Place a tortilla in a pan and add Monterey Jack cheese and cheddar cheese to one half of the tortilla. Place chicken and onions on the cheese layer and top with another handful of cheese. Fold tortilla and cook for 6 minutes flipping halfway through. Serve with extra BBQ sauce and dig in! Try it out!

Chopped Grilled Cheese
  • Ingredients: Chop, BBQ Sauce, Bacon, Bread, Butter, Cheddar Cheese, Provolone Cheese

Directions: Heat up your Chop, adding extra BBQ sauce, if needed. In a medium pan on medium heat, add two strips of bacon. Cook until crisp, flipping strips midway and set aside. Leave a small amount of bacon fat in the pan. Take two slices of bread and add butter to one side on both slices. Lay the bread down in a pan over medium heat until toasted. Flip the bread over and add two slices of cheddar cheese, two strips of bacon, and a big spoonful of Chop to one piece of bread. Add two slices of provolone cheese to the other slice. Remove bread slices once the cheese has melted and assemble your sandwich. Bon appetite!

King Ranch Chicken
  • Ingredients: Chopped Chicken, Garlic, Onion, Bell Pepper, Cream of Mushroom Soup, Cream of Chicken Soup, Diced Tomatoes, Green Chilis, Garlic Powder, Chili Powder, Cumin, American and Cheddar Cheese, Chick Broth

Directions: Preheat oven to 350 degrees. Sauté 2 cloves minced garlic, 1 chopped onion, and 1 chopped bell pepper over medium heat, until onions are translucent and tender. Add sautéed onions and bell pepper to a large bowl. Add roughly 2 cups of chopped chicken, 1 can of cream of mushroom soup, 1 can of cream of chicken soup, 1 can of diced tomatoes with green chilis, seasonings (1 tsp garlic powder, ½ tsp chili powder, ½ tsp cumin), and about 1 1/3 cup of American and cheddar cheese mixed together and stir to combine well. Add chicken broth a little bit at a time until the mixture is wet, but not soupy. Adjust seasonings to taste.

In a 13×9 inch casserole, spray with non-stick spray. Lay a single layer of corn tortillas on the bottom of the casserole dish. Top with 1/3 of the chicken mixture. Place another layer of tortillas and top with 1/3 of the chicken mixture. Repeat one more time. Cover with foil and bake for 30 minutes, until bubbly. Top with remaining cheese mixture, and broil on high for 5-10 minutes, until cheese is melted and browned to the desired doneness. Now, dig in!

  • Ingredients: Brisket, Ramen Beef Packet, Veggies, BBQ Sauce

Directions: Take one package of Beef Ramen and cook according to the directions. Pick out your favorite frozen veggies, such as corn, carrots, or peas, and add in about 2 minutes before noodles are done, so they have time to warm through. Add the ramen seasoning packet and tablespoon BBQ sauce and soy sauce, if desired, and stir to combine. Add brisket. Drizzle with additional BBQ sauce if desired. Top with choice of toppings, such as scallions, jalapenos, cabbage, or hard-boiled eggs. Enjoy!
