What is Texas BBQ?

Texas BBQ most commonly refers to the methods used to prepare grilled and smoked meats unique to Texan cuisines. Beef brisket, pork ribs, and sausage are among some of the most popular meats, often served alongside hearty side dishes. Texas BBQ has evolved over time to include other tasty options like BBQ tacos and brisket sandwiches.

Signature Styles: Central Texas Barbecue

Most Texas pitmasters know there isn’t just ONE style of BBQ. Even BBQ fans across the state have their own distinct preferences when it comes to texture, flavor, and more. The style of Central Texas BBQ is where Texan barbecue got its start. The word “barbecue” is usually accompanied by the word “sauce,” but Central Texas-style starts with a traditional dry rub (usually a blend of spices, salt, and pepper). Meats are then smoked ‘low and slow’ over post oak, pecan, or mesquite. At Smokey Mo’s BBQ, we use rotisserie-style BBQ pits and our own signature rub to smoke our meats to perfection.

In other regions of Texas, you might find the following styles of BBQ:

  • East Texas- Slow-cooked meat with a sweet, tomato-based sauce. Additionally, chopped sandwiches are very popular.
  • West Texas- Meat is often grilled over direct mesquite wood heat versus smoked.
  • South Texas- Coated in a thick, molasses-like sauce, BBQ is juicy and tender. Barbacoa is also a popular style of meat often found in tacos.

If you’re looking for BBQ with a twist, we recommend our chopped baker or our Texas-inspired Frito pie, both topped with our signature chopped.

Or get something the whole group will love with our customizable family packs. The smaller Family Pack option feeds 3-4 people while our larger option feeds 6-8 people for a perfectly unique BBQ spread.
